Handy reference
Easy to navigate, informative. Missing some common types though, and some local variants and such--it could be a lot more comprehensive, but its got most of the most common types. Conspicuously absent: pickled daikon (takuwan I think), enoki mushroom, teriyaki shiitake mushroom, yam, yam tempura, BC roll, temaki, futomaki, inarizushi. Also a few corrections and points that should be noted:
1. Specially bred non-toxic or less toxic varieties of fugu are available in some areas.
2. Surimi, though most often found in the form of imitation crab or lobster, is any simulated food product created from a paste usually of cold water groundfish, modified with an enzyme into a rubbery substance, and flavoured. Apart from crab and lobster, chicken, fish cake and shrimp surimi are also common. But only crab and lobster surimi are commonly found in sushi.
3. Various rolls mentioned in the app are by no means always found in a California Roll variant form. Often, ingredients such as shrimp tempura, crab tempura etc are found alone, or accompanied by tobiko and/or spicy mayo; when they contain avocado and cucumber, theyre usually called by other names.
